Last evening I went to do grocery and found these beauties – green, fresh and flavorful.
aha….even the sight of kaccha aam bring that sweet & sour zing in the mouth. I picked few.
Apart from making raw mango chutney, I made this instant fresh raw mango pickle.
You will need,
1-2 raw mangos – cut in cubes
5-6 green chillies – cut in ½ inch pieces
1 teaspoon each – raai (mustard seeds), fennel & kalunji seeds
Salt to taste, red chilli powder & turmeric 1 teaspoon
½ teaspoon hing
1 teaspoon sugar or some jaggery (gur)
2 table spoon mustard oil
How to make,
- Heat oil in an open pan
- Add all the seeds and let them splutter
- Add hing
- Chuck in cubed mangoes
- Add cut green chillies after a minute
- Add all the dry masala and sugar
- Remove from heat after 30 seconds
Keep under refrigeration. It lasts for a week or so.
